Production method The harvest takes place at the end of September with manual harvesting and selection of the most beautiful bunches best exposed to the sun. Destemming and soft pressing of the grapes and subsequent fermentation in stainless steel tanks at a controlled temperature between 24°-26°C. 10 days of maceration with daily pumping over and delestage. 6 months in stainless steel tanks and 3 months in the bottle. Pairings It goes well with Italian hors d'oeuvres, soups and pasta dishes but it is also ideal as a summer red wine for fish-based dishes.
