It is a wine of great character, complex. Proud and potential, as in life a boy called in our territory is, precisely Zauott, a young man, who manages to withstand the evolution of the years, also demonstrating the best. "ZAUOTT" is obtained from grapes produced from the oldest vineyards, with an average yield of 80/90 quintals per hectare.
Vinification : the freshly picked grapes are selected and de-stemmed. Passed on a vibrating table, the grapes are further selected and pressed, they are introduced into special tanks that allow submerged cap fermentation for a period of 20 days. After racking after storage in steel (18 months), to facilitate the removal of turbidity by decanting, it is aged in oak barrels and used barriques for a period of about 6-10 months.
