Amarone is the symbolic wine of Valpolicella and represents an exciting challenge for the Pieropan company. This wine was born from the family's desire to compete with the unique territory of Valpolicella, in Cellore di Illasi. Amarone realizes the dream of an important wine, rich and structured, but also elegant and refined, a distinctive element of the wines of the Pieropan company.

After withering 20 hectoliters/ha (0.5 kg per plant).
Breeding system
Guyot, with a density of 5,800 vines per hectare.
Defense method
Certified organic viticulture.

6/8 gems per vine.
Method of collection
The grapes produced in the Cellore d'Illasi area on the Garzon hill are selected manually and harvested in boxes in September. In years with unfavorable climatic conditions it is not produced.
Withering
Natural, with the help of fans if necessary. The must yield is low: one third of the original grape weight.
Winemaking technique
Crushing and destemming of the grapes. Fermentation temperature 23/24° for about 15/20 days. Pumping over and punching down are carried out daily.
Organoleptic test
Colour: intense with ruby reflections - Bouquet: broad, with hints of morello cherries, blackberries and plums. Taste: complex, enveloping, with a remarkable structure flanked by an excellent tannic shoulder and an extraordinary freshness. Wine with character suitable for aging - alcohol content: 16-17% - acidity: from 6 to 6.5 g/l - sugars: from 6 to 9 g/l.
Refinement
Maturation in 225 liter barrels. and 500 liters. for at least 24/30 months and a bottle period.
Matching
It goes well with important dishes based on game, grilled meat, braised meat, long-aged cheeses, even spicy ones. Ideal at the end of a meal, in good company and to enhance moments of celebration. Recommended temperature 16/18°C.
