The Barolo DOCG Riserva De-Rieumes comes from the best grapes of our vineyards. This wine is dedicated to the great-great-grandmother Eugenia Brezza De - Rieumes and is produced only in the best vintages. The Nebbiolo grapes are harvested in the second half of October. Once in the cellar, the pressing takes place. Subsequently, alcoholic fermentation is started with indigenous yeasts in temperature-controlled tanks. This is followed by maceration on the skins with the "submerged cap" technique, for about 3-4 weeks. At the end of this period, the wine is decanted into other tanks where it carries out the malolactic fermentation, while the skins undergo a soft pressing. At the beginning of winter, the wine is decanted into wooden barrels where it undergoes a long refinement. At the end of this period, we proceed to bottling without filtration. It will remain dormant until it is put on the market. The wine has a ruby red color with brick reflections. The nose exalts hints of ripe fruit and chocolate. The palate is full-bodied, with great structure, with elegant, traditional and very persistent tannins. Grape variety: 100% Nebbiolo Serving temperature: 16 - 17 degrees.
