VARIETY Dolcetto 100%
VINIFICATION Vinification in red with maceration on the pomace cap for six/seven days at a controlled temperature. Complete development of the malolactic fermentation following the alcoholic one.
COLOR Brilliant and intense purple red with violet reflections.
BOUQUET Intense and persistent, with hints of cherry, currant, blueberry jam and a slight herbaceous note.
PAIRINGS Ideal with local hors d'oeuvres such as Fassona tartare and veal with tuna sauce, but also with homemade pasta, medium-structured second courses, bread and salami and pizza.
FLAVOR Dry and harmonious, with a good structure, with a pleasant slightly bitter almond note on the finish. Elegant.
AGING Five months of aging in concrete or steel.
