VINIFICATION Red vinification with emerged cap maceration at a controlled temperature of 28 ° C and subsequent post-submerged cap maceration for ten / twenty days. Repeated daily pumping over and periodic delestage. Complete malolactic fermentation following the alcoholic fermentation.
COLOR Intense ruby red, with violet reflections
BOUQUET Wide bouquet with hints of red fruit, especially cherry and plum, and spicy notes of black pepper and leather.
PAIRINGS Excellent to accompany tasty first courses and different types of meat, from rabbit to lamb.

Made from 100% Merlot grapes from vineyards located in the municipality of Cassine. From the first year of production it fully demonstrates its character. Of a beautiful ruby red with purplish reflections, the scent of plum and cherry nuances with subtle spicy and balsamic hints stand out. Full-bodied wine with fine tannins, excellent in combination with first courses and meats, especially rabbit and lamb.
AGING Aging in French oak barriques for thirty months and subsequent twenty-four months in the bottle before release.
