Pinot Noir is a vine that represents a challenge for agronomists and oenologists due to its delicacy, its need for a suitable microclimate and the difficulty of having a constant production. However, when its needs are satisfied, excellent wines are obtained which are very pleasant to drink. Like Boem's Pinot Noir. Its grapes are harvested by hand in the last week of September and vinified in steel tanks at a controlled temperature. The wine thus obtained is aged in French oak barriques for six months before being bottled. Wine of great elegance, full-bodied and expressive.

The nose is a flood of fresh and crunchy fruit: cherry, blueberry, raspberry and currant accompanied by slight hints of undergrowth and hints of sweet spice, a symptom of the non-invasive presence of wood. When tasted it releases a pleasant acidity supported by a long savory trail.Excellent on a duck breast with strawberry tree honey or on a wild boar stew with juniper.
