La Pugliosa, an emerging company from Brindisi, stands out in the regional wine scene for its attentive and appreciated professionalism: maximum respect for the territory and the choice to valorise local grapes make it one of the most promising names in the heel of the boot. Based on these premises, the search for quality in each label is the natural and spontaneous goal of this winery that makes Primitivo its undisputed prince, so much so that it declines it in several versions! Pagnottella foresees a partial drying of the bunches, through what is known as the 'turn of the petiole' and which consists in choking the stem of the bunches in order to prevent the nutrition of the berries, thus inducing a natural drying on the plant. The bunches are left to dry for about 12 days, losing up to 30% of their weight in liquids and concentrating aromas and flavors to give a sip that is now at home in Salento, a wonderful expression of the ancient and native Primitivo. A wine that is becoming an interesting destination for many wine enthusiasts in the area. Dark ruby red with purple border, the nose offers memories of blueberry, blackcurrant and undergrowth, aromatic herbs and rhubarb, with sweeter and spicy nuances of vanilla, cloves and star anise and a slightly pungent vein of cinnamon. Powerful but soft sip, very greedy in the perception of black cherry jam, it has a powerful structure that stands out for its freshness and flavor. Clearly visible but modulated tannin frames a very pleasant and long-lasting taste. With important cured meats and savory first courses, such as maltagliati pasta with wild boar sauce.
