Vines Aglianico, Piedirosso Vinification The grapes are harvested when they are fully ripe, after destemming and crushing they are subjected to fermentation with intense maceration lasting 30 days with subsequent malolactic fermentation and elaboration in new French oak barriques. Organoleptic characteristics Red color with dark ruby reflections, intense aroma of black berried berries, blackberries, currants, blueberries. Soft taste, well balanced with an aromatic finish of undergrowth and spices. Pairings Excellent with structured land dishes such as a dish of “Ziti alla Genovese”. Perfect to accompany roasts and game, "Beef fillet with pink pepper" or in combination with aged cheeses and cured meats.
