In Avignonesi , the pursuit of excellence goes hand in hand with the experimentation of 100% Tuscan winemaking processes, with the intention of allowing the habitat to prevail over external influences. For this particular organic wine, Avignonesi has set aside steel and oak in favor of Tuscan clay. The name Da-Di , the Chinese term for " earth-soil ", was chosen to underline this peculiarity.
GRAPES: 100% Sangiovese PRODUCTION AREA: Various plots in the municipality of Montepulciano (SI) , at an altitude between 270 and 375 m asl SOIL: Of Pleistocene origin (3 million - 120,000 years ago) at Capezzine, Lodola and Matracchio, and Pliocene (3-5 million years ago) in I Poggetti, Le Badelle, La Banditella, El Grasso and Greppo AGE OF VINEYARDS: Between 10 and 26 years TRAINING SYSTEM: The plants are sapling, guyot and spurred cordon, with a density ranging from 2,564 to 7,158 vines / ha HARVEST: Between the end of September and the beginning of October VINIFICATION: Da-Di is vinified in 12 amphorae of terracotta made in Tuscany - 6 were manufactured by Artenova in Impruneta and 6 were manufactured by the San Rocco Laboratory in Torrita di Siena using clay from Monte Amiata. This wine is made up of one third of whole bunches and two thirds of whole berries. Fermentation takes place with indigenous yeast, followed by a daily manual pumping over program
AGING: Cut after 3 months, it is then returned to the amphora for a further aging period of 2 months before bottling
ORGANOLEPTIC NOTES: The clay gives this 100% Sangiovese a vibrant taste of red fruit with no frills: Da-Di is full of freshness and elegance. Medium body, elegant structure and berries and cherries make your mouth water and tantalize the senses, giving way to a soft and spicy finish. ALCOHOL CONTENT: 14% vol.
