Elegant, austere, of great nobility; this wine made from Nebbiolo grapes has a garnet red color with orange reflections. In the glass it releases ethereal and spicy aromas, with light notes of vanilla and dried flowers, while in the mouth it is generous, of great harmony and persistence. It goes well with red meats, game and aged cheeses.
TECHNICAL DESCRIPTION Vineyard exposure: east, south-east, west, steeply sloping. Soil composition: compact and structured soil, compound mainly of clayey marls. Vine density: about 4200-4400 vines per hectare. Type of training: Gouyot. Harvest: the ripe grapes are harvested manually in perforated baskets and shipped in the best state of integrity and freshness in the cellar, to be pressed. Vinification: after crushing with destemming of the bunches, the must is fermented in maceration with the skins, temperature controlled with frequent pumping over to ensure the right extraction of the color of the polyphenolic substances and of the tannins. The maceration lasts from 12 to 15 days. Refinement: the wine ages in small wooden barrels and barriques second pass for at least 24 months. Once bottled it is aged in glass for at least 8 months before leaving the cellar. ORGANOLEPTIC CARD Denomination: Barbaresco DOCG. Grape variety: Nebbiolo Colour: it announces itself with a brilliant garnet red colour with orange reflections. Bouquet: intense and fruity, reminiscent of violets, roses and fruits of the forest and sweet spices. Taste: full, robust, enveloping and rightly tannic on the finish. Food pairings: served around 18 °C in large glasses, this wine gives its best with roast meats, alla game, to aged cheeses. Over time it becomes an excellent wine from meditation.
