A Riserva with an austere and solemn character, which reaches the qualitative peaks of the entire range created by the Valentino Butussi farm. This "Santuari" is a Cabernet Sauvignon DOC where the balance between taste and aroma makes the sip incisive and expressive, denoting its great evolutionary potential over time. The carefully selected grapes, after harvesting, ferment in oak barrels thanks to the use of indigenous yeasts. Then we move on to the refinement, carried out for two years in oak barrels with a capacity of 300 liters; after bottling, the wine further ages in glass for 12 months. A label that interprets the Colli Orientali del Friuli terroir with a niche production, where excellence and aging capacity go hand in hand, giving us a red wine of great value.
LAND: Hillside with South-West exposure, Di
colluvial alluvial origin. Composed of marl in depth and
superficial limestones.
During the summer period the descending currents from the alps are
channeled into this fund, they create thermal excursions which
exceed twenty degrees between day and night
HARVEST: Manual, the harvest period is evaluated
visually to the achievement of the optimal maturation of the
grapes, with tasting of the grape seeds, coloring of the brush,
transfer of color by rubbing the peel.
VINIFICATION: The grapes are destemmed and placed
immediately into the vats for fermentation, it is then
left to macerate with the skins, until the spontaneous departure
indigenous fermentation. During fermentation they are carried out
manual punching down daily, until the natural conclusion of the
fermentation. The squeezing is with a traditional, modified press
to work at low pressure. After a static settling of
24 hours, it is sent still cloudy inside oak barrels
from 300 liters for 24 months of refinement.
The refinement then proceeds in concrete barrels for a further 6 months.
Bottling takes place as usual during the week
after Easter, to respect the lunar phases.
REFINEMENT IN THE BOTTLE: 12 Months. Usually
entry into the market coincides with Easter of the following year
to that of bottling
CHARACTERISTICS OF THE WINE:
Color is intense ruby red, with aging it develops reflections
garnets. Elegant nose, black pepper, sweet tobacco, and small fruits
reds. On the palate it enters harmonious, mineral, saline with a long finish
persistent.
A wine of great gastronomic versatility, it goes perfectly
with game and in general with foods with a strong flavour.
