With soils of volcanic origin and using low yields, the manual harvest during the first half of October ensures healthy grapes for traditional vinification in the cellar. After maceration and fermentation, the wine ages in French and Slovenian oak barrels for at least 4 years before refining a further 6 months in the bottle.Ruby red in color tending towards orange, it has hints of flowers and red fruits, from violet to blackberry jam. Spicy notes of cardamom and pepper precede a harmonious and enveloping taste with ripe and silky tannins. Great structure and a vibrant body, integrate roundness and long persistence.Perfect to accompany red meats, braised meats, polenta with mushrooms, game and aged cheeses.
