The grapes are destemmed and softly pressed. Subsequently they are cold macerated for 4 days. Fermentation takes place over two weeks in steel tanks with pistons breaking the cap to simulate the traditional method of mixing the must skins. After malolactic fermentation, 40% of the wine is aged for a period of 6 months in French oak barrels.
