GRAPES 60% Cabernet Sauvignon 40% Cabernet FrancCLIMATE The 2020 vintage was characterized by a relatively mild winter with sudden drops in temperature. The warm and dry spring days favored rapid budding and the water availability of the land allowed the vines to develop well during the summer months. The temperature variations in August brought the grapes to excellent ripeness, the rains at the end of the month and the consequent drop in temperatures rebalanced the vines from a water point of view. The harvest began in the first days of September.WINEMAKING In the 2020 vintage, the Cabernet Franc harvest began on September 15th and ended on the 22nd, while the Cabernet Sauvignon was harvested between September 23rd and 29th with an average yield per hectare of approximately 55 quintals of grapes. As always, the different vines are harvested manually at different times and subsequently vinified separately.Once the grapes arrive at the company in 15 kg boxes, after careful manual selection on the sorting table, they are destemmed into whole berries, then fermented in both stainless steel and oak vats at a controlled temperature.MATURATION After maturation for a year in French oak barriques, coming from the certified forests of Allier and Tronçais, both new (50%) and second passage, selected from the best cooperages with different degrees of toasting, the definitive blend between the different wines. A further resting phase follows both in large barrels and barriques for approximately 12 months.After bottling, a further 6 months of refinement in the bottle gives the wine harmony and elegance.
