Produced in the oldest production area, as stated in the disciplinary that regulates it, this area gave its name to the wine and is the only one where Chianti Classico is produced. It extends between Florence and Siena in a territory of breathtaking beauty, made up of villages perched on the top of the hills, of olive trees cultivated in steep fields with an irregular outline and of cypresses lined up to delimit the innumerable dirt roads.
Grapes used Sangiovese, Canaiolo and other red berried varieties. Vinification technique Maceration of the pomace in the must with control of the fermentation temperature. Maturation Brief stop in oak barrels, storage then in steel or vitrified concrete containers, to finally pass into the bottle. Aging Stop for 4/6 months in oak barrels, then storage in steel or vitrified concrete containers, to finally pass into the bottle. Color Ruby red tending towards garnet with evolution. Taste Velvety, sapid, round, with good body and good structure. Perfume Net, intensely vinous, with hints of flowers in particular of violets. Alcohol content 13-13.50% vol. Serving temperature 18-20 °C. Gastronomic matches Mixed grills, red meats and game.
