Calabrian wine Di Peperosso Calabria IGP 30,000 bottles were produced. The territory of origin of the Magliocco and Merlot grapes is that of Donnici, with selected and harvested by hand. The vines are trained as saplings, with an average yield deliberately reduced to 80 quintals of grapes per hectare. The harvest takes place from the end of September to mid-October. The vinification involves soft pressing, subsequent cold pre-fermentation maceration, in order to extract the true aromas, the color and the softer polyphenolic components. The fermentation takes place in steel, with controlled temperatures, as does the initial refinement, for a duration of 6 months. Then follows a further period of refinement in the bottle, which precedes marketing. Ready to drink immediately, but if it rests in the bottle it will be at its best. The softness and pleasant fruitiness make it an excellent, but not exclusive, match with spicy dishes, typical of regional cuisine.
