Grape variety : Nero DAvola Production area : Salaparuta, 300 - 400 mt, Sicily Harvest period : First week of September Vinification : Harvested when phenolic, it is left to macerate for 12-15 days at 26 C. with daily pumping over. After racking, it is aged in stained steel tanks for about 4 months. Part of it is aged in barriques. The process is completed with the refinement in the bottle. Sensory characteristics : Dark red color with purple hues. Fruity notes on the nose ranging from licorice to berries. On the palate it has good body and soft and round tannins. A persistent and fruity finish. Food matches : Legumes, mushrooms and tasty meats. It goes perfectly with turkey and ribs. Also worth trying with Asian food. Serving temperature: 16-18 ° C
