Grapes: Barbera, Pinot Noir Vineyard: Limestone-marly soil with the presence of clay, sandstone and sand. Hilly position above 400 meters above sea level on sunny hillocks with notable climatic characteristics. Presence of stone walls surrounded by brooms and junipers. Training system Short Guyot with at least 7,000 vines/hectare. Grive (Turdus pilaris) are greedy for juniper berries that they find near the vineyard they feed on during their walk. Production Technology: Traditional and manual cultivation. The perfectly healthy and ripe grapes are harvested late and after a careful selection, they are pressed and fermented in small tanks at a controlled temperature. After racking, the malolactic fermentation is favored and with the subsequent cold of winter the natural stabilization is obtained. This is followed by aging in small oak barrels for about 10 months. The bottling is usually carried out at the end of the summer just before the start of the vinification of the following year. The choice of vines, the cultivation and the care in the vinification ensure this wine abundant quantities of anthocyanins and noble beneficial polyphenols. Organoleptic Characteristics: It has unique characteristics of fruit accompanied by a very strong bouquet with hints of vanilla and spices. Velvety taste rich in overripe tannins with excellent drinkability that evolves in complexity over the years. Gastronomic Pairings: Drunk young, it is a wine that is well suited to cooked vegetables, minestrone and well-seasoned pasta. In the following years it is a wine for roasts and even aged cheeses. It should be served at a temperature of 18-22° C in large crystal glasses.
