Method of collection
The grapes produced in the Cellore d'Illasi area on the Garzon hill are manually selected and harvested in boxes in September. In years with unfavorable climatic conditions it is not produced.
Withering
Natural, with the aid of fans if necessary. The yield in must is low: one third of the original weight of the grapes.
Winemaking technique
Crushing and destemming of the grapes. Fermentation temperature 23/24 ° for about 15/20 days. Pumping over and fulling are carried out daily.
Organoleptic examination
Color: intense with ruby reflections - perfume: ample, with hints of cherry, blackberry and plum. Taste: complex, enveloping, with a remarkable structure flanked by an excellent tannic shoulder and an extraordinary freshness. Wine with a character suitable for aging - alcohol content: 16-17% - acidity: 6 to 6.5 g / l - Sugar: 6 to 9 g / l.
Refinement
Maturation in 225 liter barrels. and 500 lt. for at least 24/30 months and a bottle period.
Pairing
It goes well with important dishes based on game, grilled meats, braised meats, long-aged cheeses, even spicy ones. Ideal at the end of a meal, in good company and to enhance moments of celebration. Recommended temperature 16/18 ° C.
