Grape variety: Primitivo. Training system: old Apulian sapling. Age of the vines: 60-70 years. Production area: red soils very rich in iron oxides lying on limestone, located in the Salento peninsula (Manduria and Sava, in the province of Taranto). Vinification: harvesting of the grapes in slight over-ripening destemming-crushing maceration at a controlled temperature for 10-12 days with periodic pumping over, racking and malolactic fermentation in stainless steel, aging in American and French oak barrels of first and second passage for the following ones 12 months. Sensory characteristics: very deep ruby red color with garnet reflections complex bouquet with hints of ripe red fruit, plum jam, vanilla and cocoa. On the palate it reveals a robust and velvety body, with a persistent finish with notes of chocolate. Food pairings: traditional Apulian dishes, meats with savory seasonings, roasts and well-seasoned cheeses. Serving temperature: 18 ° C.
