Cooked wine is a dessert wine of ancient tradition and of particular value, typical of the Abruzzo region. The preparation is obtained from a reduction of about 50%, after a slow and continuous boiling of the freshly pressed must. The concentrate obtained is left to cool, then fresh must is added and finally it is left to ferment very slowly in wooden barrels. Even today, cooked wine is consumed on occasions to remember and in the toasts of many wedding banquets. As tradition dictates, the groom's father offers the guests this particular wine, prepared at the birth of the male child and stored in a small barrel until the day of his wedding. Also appreciated for facilitating digestion.
