Narration of shepherds and echoes of transhumance. Autochthonous tales like bunches that ferment in the millstones to give us mineral wines with an authentic taste. In the rocky basins of Petra Iniqua (Pietranico) the nectar is dressed in history and nostalgia, captivating our senses. The vineyards are located in the surroundings of Pietranico, a small village in the Pescarese area, where from ancient times the use of rock stone basins for pressing and winemaking was widespread.

HARVEST
The harvest takes place in the second week of October when the grapes reach full biological and technological ripeness, evaluated by measuring the sugar content, pH and total acidity. The grapes are harvested respecting their integrity and intrinsic organoleptic characteristics.
VINIFICATION
The vinification takes place respecting the tradition, after the destemming and crushing the grapes are placed in stone tanks of various capacities and geometric shapes, where the must is fermented in contact with the skins at a controlled temperature of about 25-28 ° C . During this period the skins are periodically stirred with the must to favor the extraction of the polyphenols and the aromas contained on the skins. At the end of the alcoholic fermentation, the wine is decanted into steel containers to complete the malolactic fermentation, at the end of which repeated decanting is carried out until natural stability and clarity are obtained. All cellar and bottling operations are carried out with the utmost attention, taking care to respect the natural processes of evolution and maturation. In all stages of winemaking and bottling, to guarantee and protect the genuineness and wholesomeness of the product, the rules laid down by the regulations for the production of organic wines are respected.
