Given the still hot period, the grapes dry perfectly and quickly with an optimal result. After pressing, carried out at the end of December, the alcoholic fermentation starts very slowly by the indigenous yeasts after about 20 days of maceration and lasts approximately 50 days.
Refinement For the refinement of this wine, French oak barriques (Limousin, Allier, Tronpais) are used for 30 months. For the next 30 months it is combined in a single mass in a medium-sized Slavonian oak barrel. Various alcoholic fermentations take place during the maturation phases.
