Vinification Destemming and fermentation with indigenous yeasts in enamelled concrete tanks for about 14 days, with frequent pumping over and punching down, then racking and soft pressing
Aging 10-12 months in oak barrels and barriques and 6 months in the bottle
Production philosophy: Indigenous yeasts , Independent Winegrowers
