AGE OF VINES 45 years.

VINIFICATION Harvest at the end of October, once phenolic maturity and the balance between sugars and acidity have been reached. Selection of the grapes, maceration and fermentation for about 30 days in open conical Slavonian oak vats.

COLOR Dark ruby color with shades of purple ink.

BOUQUET The bouquet highlights aromas and flavors of dark plum, blackberry nectar and aromatic herbs, enriched with notes of coffee and cocoa.

PAIRING Complex preparations based on red meat such as stews, braised meats and stews, feathered and feathered game, long-aged cheeses.

A wine with an intense and ample bouquet, with a fresh and soft palate and an intriguing and full color.

AGING Malolactic conversion and subsequent aging partly in barriques, partly in tonneaux, partly in cement and partly in the same fermentation vats for about 18 months. Racking, blending and bottling, during the most propitious phase of the moon, without filtration, one year before release.
