It is the result of a selection of grapes from Central Tuscany; Dogajolo Rosato is an elegant and structured product, with fruity and lively floral notes, essential characteristics for a young, innovative and easy to taste wine.
| Winemaking technique | The must obtained from the delicate pressing of the grapes is brought to a low temperature and kept in contact with the skins for a limited time. |
| Refinement | It does not need to undergo particular evolutions. It is bottled very early, in the January following the harvest, after the necessary care that follows the fermentation. |
| Color | Soft pink with an elegant bright fuchsia hue. |
| Perfume | Floral characteristics, in particular of rose, myrtle and vine flower, also consistently present the fruity aromas such as apple, currant and morello cherry. |
| Taste | Broad and decisive, balanced in acidity, the fruity characteristics can be felt on the nose but with different nuances, it gives pleasantly varied sensations. |
| Gradation | 12.5% vol. |
| Service temperature | 10-14°C. |
| Food pairings | Excellent appetizer wine. It goes very well with pink meats, peppery specialties and cheeses, excellent with grilled fish. It can be an excellent aperitif, grilled and also with sausages. |
