TYPE Sparkling wine - Brut PRODUCTION AREA Oltrepò Pavese. Medium hilly area, West South West exposure. VARIETY 100% Pinot Nero SOIL TYPE Limestone-clay soil VINIFICATION The grapes, after maceration in the press for a few hours, undergo a soft pressing and the flower must (65% yield) is fermented in steel. The base wine rests on the fine lees until December and is then made sparkling in an autoclave (Charmat method). TRAINING SYSTEMGuyot COLORSoft pink. Fine and persistent perlage. BOUQUET Perfume characterized by hints of raspberry, wild strawberry and yellow fruit. TASTE Soft, enveloping taste with a well-balanced freshness. AGEING After the second fermentation, the wine ages for 6 months on the yeast lees and bottled with a residual sugar of 8 g/l.
