Wine: Spumante Metodo Classico Year: Non-millesimo Grapes: 100% Sangiovese Notes: In 2010 we tried a young pink sparkling wine from Sangiovese grapes more as a desire to try new things than as a bottle to repeat. There were so many requests to do it again that in the end, after eight years, we are trying again. Consequently we are talking about a sparkling wine, although produced with the classic method, more suitable for aperitifs or to start a meal; we will then continue with our classic method of thirty-six or forty-two months of Passerina. Characteristics: Pale pink colour, fine and persistent perlage, aromas of red fruits. Aged for 12/24 months on the lees. Pairings: Aperitifs. Serving temperature: 4/6°. Degrees: 13.0.
