Climate: Mediterranean, low winter rainfall and windy and sunny summers

Training system: low espalier tree. Plant density of 5000 vines per hectare and production of 50-60 q.
Harvest: manual in small 20 kg baskets and selection of the grapes upon arrival in the cellar. First ten days of October
Vinification: long maceration of 30 days at 25°C. It completes the malolactic fermentation and the subsequent refinement on the fine lees, in temperature-controlled steel vats in order to enhance the typical aromatic component of the vine.
Colour: intense ruby red
Smell: slightly spicy with hints of very ripe red fruit
Taste: structured, warm and persistent
Storage: protected from light, with horizontal bottle, controlled temperature and humidity 17°C – 70% Serve at a temperature of 16-18°C
Pairings: cured meats and land-based first courses, medium-aged Sardinian pecorino. Roast suckling pig and lamb seasoned with myrtle and juniper, red meats.
