This rosé is produced from a vineyard over 40 years old, trained with spurred cordon with a density of 2200 plants per hectare with a yield of 8000 kg / ha. The production area is on the hills around Paterno di Campli at an altitude of 400 meters above sea level. The grapes are harvested by hand in the first week of October and transported to the cellar in small crates. Fermentation takes place at a controlled temperature of 18 ° C. The maceration in contact with the skins is short and cold and is completed with the malolactic fermentation in steel where the refinement also takes place. With a medium intense rosé aspect, Pathernus Cerasuolo d'Abruzzo has a bouquet with hints of black cherry and peach. The palate is full-bodied and persistent and rich aromatic notes. To best restore these qualities, it should be served at a temperature of 12 ° C. It goes well with Mediterranean dishes, light cheeses. But at a temperature between 16 and 18 ° C it also combines informally with more structured dishes due to the importance of the grapes used, the same as the Pathernus Colline Teramae Montepulciano d'Abruzzo DOCG.
