Vinification: the grapes remain in contact with the skins for 4/6 hours at 5°C, this favors the dissolution of the varietal aromas. Fermentation: the wine undergoes a second fermentation at a controlled temperature in an autoclave with selected yeasts. Second fermentation lasts about 10/15 days. Colour: bright pink with a fine and persistent perlage. Smell: hints of rose, cherry and red fruit, with a spicy tip. Taste: harmonious, persistent, fragrant, with a pleasant acid note and a soft finish. Pairings: shellfish, raw fish and fish soups. Excellent with pizza, cold cuts, and as an aperitif.
