Rosa del Castagno Syrah Rosato Toscana IGT 2022 - Fabrizio Dionisio

Rosa del Castagno is made only with Syrah grapes grown in our vineyards, all characterized by very low yields per hectare (maximum 50 quintals from 5,000 plants), carefully selected specifically to make this wine, especially before and during the harvest. which takes place at the end of August, therefore well in advance of the beginning of the harvest of the grapes used to produce our red wines. The harvest takes place at dawn, exclusively by hand, in small 15 kg perforated boxes. Then we carry out a real "white" vinification: after an extremely soft crushing and destemming the grapes are immediately pressed (for a maximum time of about three hours) in an equally delicate way, then only the flower must is transferred to steel tanks where it ferments at low temperatures, for about 15 days, without having any contact with the skins. After about six months of maturation and refinement, at low temperatures, on the noble lees, marked by frequent batonnages, and a period of stabilization and natural clarification in the cellar, the wine is bottled. Its particular, fascinating pale pink color with amber reflections, and its fresh, floral and fruity fragrance, the remarkable persistence, the marked acidity, the characteristic sapidity and the decisive minerality are the natural result of these simple, ethical cultivation and oenological practices and environmentally friendly, in the name of the best "technological craftsmanship", but above all the fruit of the magnificent terroir of Cortona and the unique soil of our vineyards, which has also been able to give us this delicious pink version of Syrah.
