The French blood of the Vistarino family can be found in the Pinot Noir clones, in the architecture of the villa and in the name of this wine which is the marriage of two primary grape varieties for sparkling wines: Pinot Noir and Chardonnay.
TYPOLOGY Sparkling Wine VSQ Classic Method Brut PRODUCTION AREA Oltrepò Pavese. Medium hilly area, altitude from 200 to 400 meters. VARIETY 80% Pinot Noir, 20% Chardonnay TYPE OF SOIL Clay-limestone soil VINIFICATION The grapes are harvested separately by hand in 20 kg boxes and stored at 10°C in a cold room before soft pressing. The free-run musts (45% yield) are fermented in steel at a controlled temperature and after blending the base wine remains on the fine fermentation lees until drafted the spring following the harvest. After at least 30 months on the lees, disgorgement is carried out with a sugar dosage of 7g/l. TRAINING SYSTEMGuyot and spurred cordon COLORStraw yellow with bright reflections. Fine and abundant perlage. BOUQUET Elegant, ample, delicate bouquet with floral freshness and balsamic notes. FLAVORFresh taste of citrus fruits, elegant harmonic and good structure and minerality. AGEING Aging on the lees for at least 30 months.
