Description

PRODUCTION TECHNOLOGY DOGMA, the name sums up our CREDO, our Philosophy, our profound and personal conviction that Pinot Noir is, and remains, a formidable grape from which to obtain great wines. The Pinot Noir grapes for the production of Dogma require particular attention in the last stages of its maturation in the vineyard. Thinning on the vine is necessary. This selective care before the harvest is essential for obtaining a not very deep color and a rather high acidity which gives the wine longevity once in the bottle. After pressing the Pinot Noir grapes, the non-sulphited must is clarified with a simple static clarification, stripping almost completely of its coloring substances. In April of the year following that of the harvest, the wine is bottled, where, after chaptalization and the immediate addition of batch yeasts, it undergoes refermentation. Once this process, which gives rise to the characteristic foam, is completed, the maturation on the lees follows, which lasts about 36 months.

TASTING NOTES Fine and intense perlage and persistent froth give rise to a whirlwind of colors ranging from greenish yellow to coppery, characteristic of a Spumante obtained from Pinot Noir grapes. The olfactory panorama is elegant and precious with notes of musk, humus, citrus mixed with hints of undergrowth , tobacco, leather and notes of eucalyptus. Refinedly balanced, rich, full taste with a froth that makes it enveloping even as it is not a dosed sparkling wine. The finish is disruptive with a vinous perception that undoubtedly elevates it to Vino d'Autore.

GASTRONOMIC COMBINATIONS Excellent as an aperitif and toast at any time of the day, at the table it goes delicately with soups, shellfish, shellfish, white meats and fresh cheeses.
