VINIFICATION: A hand harvest is carried out in small crates; soft pressing of the whole Chardonnay grapes follows. Vinification takes place 90% in steel and 10% in tonneaux. The following spring it is bottled with the addition of selected yeasts. The manual remuage is carried out and after a stay on the lees for at least 48 months the disgorgement takes place with the addition of the liqueur d'expedition. AGING ON THE YEASTS: 48 months.
