White foam, soft and rich; fine and persistent perlage. Straw yellow color with bright golden reflections. Bouquet rich in white flowers and fruity with hints of pear and tropical fruit. On the palate it is fresh and inviting, complex and full of balance.
VARIETY Pinot Noir 100%. PRODUCTION AREA Oltrepò Pavese. SOIL silty marl with a high presence of active limestone. CULTIVATION espalier-trained vineyards with guyot pruning, 4500 plants per hectare located at 150 – 300 m above sea level. PRODUCTION AND YIELD OF GRAPES/MUST 100 quintals/hectare and 50 hl/ha. VINIFICATION white must obtained through soft and progressive pressing of the grapes, with separation of the various fractions based on pH and organoleptic characteristics. Fermentation with the addition of selected yeasts at 18°C takes place in stainless steel tanks. MATURATION the "tirage" or the second fermentation takes place in the bottle followed by at least 28 months of rest on the lees. After disgorgement, the sparkling wine rests for 3 months in the bottle before being put up for sale, to favor its maximum aromatic and gustatory expression.
