White foam, soft and rich; fine and persistent perlage. Straw yellow color with bright golden reflections. Rich and complex bouquet with hints of minerals, candied fruit, notes of tobacco and spices. On the palate it is fresh, mineral, saline, great freshness balanced by a great body.

GRAPE VARIETIES 100% Pinot Noir. ORIGIN vineyards located in the middle and upper Valle Versa in Oltrepò Pavese (south-western Lombardy). Variable height between 200 and 500 m above sea level. PRODUCTION AND YIELD OF GRAPES / MUST 12000 kg/hectare and 4800 L/ha (40%). VINIFICATION white vinification through soft and progressive pressing of the grapes. Fermentation with the addition of selected yeasts at 18°C takes place in stainless steel tanks. In the following spring, the best base wines are assembled, coming from the most suitable vineyards to have a balance between structure, freshness, minerality and aromatic complexity. MATURATION the "tirage" or the second fermentation takes place in the bottle at a controlled temperature of 13-14°C in our underground cellar followed by a minimum period of 72 months of resting on the lees. After disgorgement, the sparkling wine rests for at least 12 months in the bottle before being put up for sale. BOTTLING TECHNICAL DATA alcohol: 12.5% vol residual sugar: <3 g/l total acidity: 7-7.5 g/l total dry extract 23 g/l pH 3.01 pressure: 6 bar. ALCOHOL CONTENT 12.5% vol. SERVING TEMPERATURE 8° C.
