Yield per hectare: 100 quintals/ha Vinification and ageing: After a soft pressing of whole grapes up to a maximum of 50%, the must is left to ferment in steel tanks at a temperature of 14°C for about 20 days. After stabilization, the wine is subjected to a refermentation in an autoclave for about a month and a half and for the following 6 months it remains in contact with the refermentation lees to ensure greater structure and finesse of the perlage.
