A jewel born in 2007 from thirty years of experience. Only the best Chardonnay (75%), Pinot Nero (15%) and Pinot Bianco (10%) grapes from 134 vineyards, vinified separately and wisely blended with reserves of the most beautiful vintages (at least 20%) enter the magical rite of Cuvée Creation . It will take 28 months of aging on the lees before this wine is ready to express all its richness and identity. A classic Franciacorta, balanced, pleasantly fresh and crunchy. DESIGNAZIONE Franciacorta. VARIETY OF GRAPES Chardonnay 75%, Pinot Bianco 10%, Pinot Nero 15%. ORIGINATING VINEYARDS 96 Chardonnay vineyards, with an average age of 27 years, located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca, Iseo and Passirano. 3 Pinot Bianco vineyards, with an average age of 21 years, located in the municipality of Passirano. 17 Pinot Nero vineyards, with an average age of 19 years, located in the municipalities of Erbusco, Provaglio d'Iseo and Passirano. HARVEST PERIOD First and second ten days of August. AVERAGE YIELD PER HECTARE 7,500 kg of grapes, equivalent to 4,730 litres of wine (must/fruit ratio 63%). VINIFICATION The base wines of the Cuvée Prestige are made according to a strict vinification protocol. The hand-picked grapes are codified in the vineyard, refrigerated in cold storage and selected by experienced cellar staff before whole cluster pressing. Alcoholic fermentation takes place in temperature-controlled steel tanks, where the wines remain until the following March. A further seven months of ageing are required for the wine to clarify, mature and reveal the character of its vineyard of origin. Subsequently, the wines are carefully blended with reserve wines from the best vintages (20% to 30%) in the magical ritual of cuvée making. It is this special technique that gives the Cuvée Prestige its distinctive character. The essence of Franciacorta at Ca 'del Bosco. Only after a maturation period of around 25 months will this Franciacorta be ready to express all the sumptuous depth of its personality. Disgorgement takes place in the absence of oxygen using a unique system designed and patented by Ca 'del Bosco. The process avoids oxidative stress or the need for additional sulphites, making Ca 'del Bosco Franciacortas purer, more attractive and longer-lived. Finally, each bottle is given an individual marking to guarantee traceability. DRYING From April to June of the year following the harvest. MATURATION For an average of 25 months.
