Total 8.10 g/L; pH 2.97; SO2 tot 68 mg/l Formats: Standard 0.75 L bottle in box Vinification: At the harvest the best grapes of the company are selected on a conveyor belt and subsequently softly pressed. After which the must is fermented in steel tanks for the first 2 days of fermentation and then the fermentation takes place in used barriques. The sparkling base is aged on the fine lees in barriques for 7 months with weekly battonages. The refinement in the bottle in a dark environment lasts at least 72 months. At the disgorgement the bottles are filled exclusively with the same wine without adding anything else. Tasting: Straw yellow color with very fine perlage. On the nose, the notes of pastry, hazelnut, spices such as cloves, star anise, hydrocarbons, green tea and coffee stand out. In the mouth it is of great complexity and remarkable elegance.
