The Ribolla Gialla del Collio, famous for its versatility in winemaking, lends itself to the second fermentation while maintaining its peculiar characteristics of flavor unchanged and enhancing the freshness of its more spontaneous scents: a pearl to which we have combined the perlage of a long Charmat; thus in 2015 the Ribolla Spumante brut from Polje was born.
