SERVE AT 10-12 °C FORMAT VINIFICATION A hand harvest is carried out in small crates; a soft pressing of the whole Chardonnay grapes immediately follows. After fermentation, the yeasts are separated and the cuvée is prepared. Stored in steel tanks, it is bottled the following spring with the addition of selected yeasts. After a stay on the lees for a period between 15 and 18 months, the remuage is performed and then the disgorgement with subsequent packaging. VINES Chardonnay grafted on Kober 5BB, planting layout 3.20 x 0.80 m, Trentino pergola. PLANT DENSITY 3,000 plants per hectare CULTIVATION Short pruning, organic fertilization in biennial/triennial rotation, working the soil in alternate rows, drip irrigation only.
