VARIETY Ribolla Gialla 100% (2-3% raisins)
TYPE OF SOIL Clayey marl alternating with layers of sandstone (calcified sands).
AGE OF VINES 60 years
VINIFICATION Manual harvest of the grapes, of which about 2-3% only after drying. The clusters are softly pressed with pneumatic presses and sent for alcoholic fermentation in steel tanks with temperature control for 8-10 days. Referments in autoclave for 3-4 months.
TRAINING SYSTEM Guyot
COLOR Deep straw yellow, with a dense and intense foam.
BOUQUET Mineral and citrus hints, which over time turn into a denser sensation of wild flowers, clover honey and ripe pear.
PAIRING When young it can accompany fried or raw fish, but it is also fantastic with very spicy and spicy dishes (Indian or Thai). Over time it becomes a magnificent combination with soft cheeses such as Taleggio or Robiola
TASTE Lively, rich, fruity, savory and refreshing, with good balance and expressiveness.
NOTES Spumante Brut Plus is a lively version presented by the Bastianich winery with the guise of bubbles. The starting white grapes are in fact processed following the Martinotti Method, giving rise to a sparkling wine with an agile and drinkable sip, ideal to be tasted at aperitif time. A highly versatile label, therefore suitable for all those who always want to be on the safe side.
