Vinification : Vino Cotto (boiled wine) is obtained from the slow and constant boiling of the freshly pressed must until it loses 30-40% of its original volume. Then the must is left to cool and, after adding a variable quantity of fresh must, the product is transferred to oak barrels where the fermentation takes place and the aging lasts at least three years.
Description : caramel red, consistent, dense, with a rich smell of prunes and figs, honey, dark cocoa powder, dates and raisins, as well as cinnamon and caramel aromas. Upon tasting, the sweetness of the wine is well balanced by the freshness and delicate flavor. Very persistent at the end, full of flavors of dried fruit.
Pairing : Perfect with all dry desserts, especially if made with almonds, excellent to sip at the end of a meal.
Serve at a temperature of : it is recommended to serve it at a temperature of 10-12 C °.
Curiosity : it was traditional for the groom's father to offer the Cotto wine made in the year of his son's birth to the wedding guests.
