The Passerina grape is the native Trebbiano variety of our province. It was traditionally grown in the areas closest to the sea and has the typical characteristic of the Trebbianos of being able to make large productions; naturally, with non-intensive breeding and adequate pruning, production is limited and very interesting wines are obtained.
Grapes: Passerina 100% Notes: We also have the Passerina for the Trebbiano bottle grown in a cooler, clayey area but for this wine the grapes are grown in a higher parcel with a soil structure with more sand and gravel . The processing is the classic one of white wines all in steel; crushing-destemming, cryomaceration, fermentation at low temperatures, aging sur lie, bottling. Characteristics: Straw yellow colour, fresh in the mouth, aromas of elderflowers, savory. Pairings: Fish appetizers. Serving temperature: 7/8° Degrees: 12.0
