Production area: Agro di Cerignola (Fg) Type of wine: Organic white wine. Soil composition: Mainly calcareous. Training system: Guyot. Planting density: 5,000 plants per hectare. Harvest: By hand, in crates. Vinification: The bunches are rigorously hand-picked, in crates and, immediately after harvesting, they are placed in cold rooms at a temperature of 0°C for 24 hours, in order to preserve all the aromatic component. Subsequently, without being destemmed, they are subjected to soft pressing. After a brief pre-fermentation clarification, fermentation is started at a temperature of 12°-14° C.
