SOIL: Medium texture with a prevalence of clay and gravel.
EXPOSURE: South-West.
CULTIVATION SYSTEM: Spurred cordon.
HARVEST PERIOD: End of September, first half of October.
VINIFICATION: Fermentation takes place entirely in stainless steel barrels at a controlled temperature.
AGING: In steel for 3 months and in bottle for 3 months.
ALCOHOL CONTENT: 12% vol.
PRODUCTION: 26,000 bottles.
SERVING TEMPERATURE: 10°C.
COLOUR: Straw yellow color with golden reflections.
SMELL: The nose is intense, it opens with an excellent bouquet that recalls peach and yellow apple.
TASTE: In the mouth the sensations of softness are well balanced by the freshness. The acidity leaves the mouth clean with a pleasant fruit aftertaste.
PAIRINGS: Cured meats, fresh cheeses, vegetables, fish.
