In our cellar, between the MORrone and Majella mountains, MORMAJ IN BOLLE is born, a sparkling white wine, obtained from Trebbiano grapes, refermented in the bottle.

Description

The white wine refermented in Bolle di Mormaj is obtained with native white berried grapes of the area. The Mormaj company is located in the Pescara hills. Andrea and Francesco, friends and partners in this adventure, have decided to recover the land that belonged to Francesco's family to start a respectful and low environmental impact wine estate project. In Bolle is produced with native white berried grapes of the area. The vine parcels are rooted in a variegated terroir composed of clay and the presence of limestone. Andrea and Francesco take care of the company at full biological and biodynamic regime, respecting the plants and the territory. In the vineyard as in the cellar, the processes are carried out by hand, trying to have as little impact as possible.

No herbicides, fertilizers or chemicals are used. Even in the cellar, only indigenous yeasts are preferred, long fermentations and no filtration or clarification. The grapes destined for the vinification of In Bolle are harvested manually when fully ripe and left to ferment spontaneously with indigenous yeasts only. The wine then naturally referments in the bottle according to the Ancestral Method with the addition of previously frozen must. No sulfur is added to the wine.

In the glass In Bolle has a bright straw yellow color with a lively bubble. On the nose the bouquet is expressed with hints of wild flowers, green apple, citrus fruits and bread crust. When tasted we find a fresh, lively wine with good flavor and persistence. Excellent nose-to-mouth correspondence. We recommend combining In Bolle for your aperitifs combined with savory delicacies. Also excellent to accompany fish-based dishes, appetizers, fried seafood and steamed shellfish. You can also combine it with fish tartare and risotto; if you have no ideas, we'll give it to you: risotto with asparagus, lemon zest and raw prawn tartare on the finish, a marvel!
