PRODUCTION TECHNOLOGY At the time of the harvest, the grapes, after having undergone an initial summer thinning and now ripe at the end of September, are subjected to a careful selection to further enhance their personality. Once in the cellar, it is softly pressed and in the must the alcoholic fermentation creates, thanks to a constant temperature control (12-13 °C) the first connotations of the Chardonnay. The Crevoglio remains to mature in stainless steel tanks for a few months, undergoing only one racking in this period of time. The wine is bottled at the end of February. The whole lot will be refined for a few weeks to make the product available for sale in the first days of April.
TASTING NOTES Nice full straw colour, clear greenish reflections when young, very fresh nose with perceptions of linden, hazelnut and ripe banana; the mouth is structured with good balance. Its aftertaste is delicate, reminiscent of olfactory scents and confirming its own personality.
GASTRONOMIC COMBINATIONS At the table it prefers fish and shellfish appetizers, vegetables, white meats, very delicate first courses and even well-aged cheeses.
